How can I modify sensortag code to take data while bluetooth connection is not connected?

I suppose you can use UART.

I am actually planning to log data onto a flash memory. To be pulled off with the bluetooth. However, when bluetooth is not connected the chip shuts down the sensors.

I suppose you can turn on sensors anytime you want.
