If yes does it capture traffic from all the channels concurrently?
If no, what are the alternatives?

Yes, CC2540 USB Evaluation Module Kit supports BLE packet sniffing. When doing BLE sniffing, it will start scanning BLE advertising on channel 37, 38, and 39. Once it detect BLE connection, it will follow the BLE FH channel. By the way, TI packet sniffer for BLE sniffing is not powerful and capable to decrypt BLE encryption or BLE 5.x sniffing. If you need a powerful BLE sniffer, you might need a commercial one like Ellisys provided.
When doing BLE sniffing, it will start scanning BLE advertising on channel 37, 38, and 39. I am not sure if that’s what you mean concurrently.
The TI device has a single radio core and will therefore scan sequentially on channel 37, 38 and 39.
Some 3rd party vendors has sniffer with multiple RF front ends where concurrent scan on channel 37,38 and 39 is possible. But these sniffers usually has much higher cost. than the TI sniffers.
