Although we don't have an exact ADC > BLE example, the SimpleLink Audio Plugin may be of help, as it shows the interaction between a peripheral, the Stack and opening a data streaming way.

The "plugin" is, in fact, an example code and not something that is installed into CCS.
Unfortunately I do not have an example that redirects information to the SD card, but you can try to leverage an SPI example project such as spimaster or spiffsexternal to your SD card in SPI mode.
