I would recommend to leverage the example we have for CC2640 in the BLE stack (https://www.ti.com/tool/BLE-STACK). There you will find a "thermometer" example that can be ported to CC2640R2F.

I'm confusing about the IO level of the CC2640.
What voltage is output of internal DCDC and GLDO?
Operating supply voltages VDDS2 and VDDS3 is from 1.8V to 3.3V.
If VDDS2 and VDDS3 are supplied 1.8V, is there any problem with the system?
