I tried to set up two CC2510 in SmartRFStudio and send packets between them. Then I enabled the FEC Encoding and Decoding on both devices and was able to successfully send packets between them. I went through the user guide and found some notes that could be of interest. Check that all those are taken into considerations.

• Manchester encoding is not supported at the same time as using the FEC/Interleaver option or when using MSK modulation.
• When FEC and interleaving is used the minimum data payload is 2 bytes.
• When using FEC (MDMCFG1.FEC_EN=1), CLKCON.CLKSPD must be set to 000.

Also there is some info in the CC2510 errata (http://www.ti.com/lit/er/swrz014c/swrz014c.pdf) about how the receiver can get stuck in the receive state. Depending on the CRC and APPEND_STATUS settings this can occur when FEC is enabled. TO read more on how to set up the receiver correctly read this design note:

Are compatible whitening and FEC? Can i enable  FEC and whitening together?

Yes you can do both together. The data after the sync word (Length byte, address byte, payload and CRC9) will be whitened before the FEC/Interleaver stage.
