"My target is to read a serial water meter reading value and externally connected current sensor value.": This does not give any information about the interface you want to use. Is it SPI, UART, I2C or something else?
Using Contiki NG you can use the drivers meaning that you can look at the examples in the SDK on how to use them.
For SPI usage, you can refer to the APIs in board-spi.c/board-spi.h under \contiki\platform\srf06-cc26xx\common
For Digital IO, you can refer to button-sensor.c/leds-arch.c under \contiki\platform\srf06-cc26xx\launchpad
For ADC, you can refer to sunmaysky.blogspot.com/.../how-to-add-coap-resource-to-read-adc.html

Sorry for the disturbance. In my case I need to read the analog sensor/serial data through udp-clients(nodes). I add them to payload of client and send it to border router. So is it correct to include above mentioned .h files by you to udp-client.c and call a function to read.
Ex- To get RSSI values I included net/ipv6/sicslowpan.h and called sicslowpan_get_rssi()
for counter time sys/ctimer.h and calling function clocktime() i can get the value.
So my question is how I code to read analog sensor values/ serial data values to udp-client to get sensor values?? Are there any functions to get the sensor values???
