I would like to use CC1120 for my IOT application which should work in the sub-1 GHz 868 band. I intend to know the number of max channels I will be able to have if data speed is about 1.2kbps.

A channel spacing of 12.5 kHz can be used with 1.2 kbps data rate. Note: you need a very tight tolerance reference clock (i.e. TCXO) to operate with this narrow channel spacing (and also this narrow RX filter BW).
