I am curious if anyone has the complete dBm output for each of MCS0,1,2,3,4,5,6 for this chipset? The spec sheet has the OFDM values but not specifically MCS. I am trying to calculate out some expected behavior vs other chipsets and want it to be as close as possible for obvious reasons.

There is an application note which discusses the WLAN tx power for the CC200: CC3100/CC3200 WLAN RF Transmit Power Peak and Average Measurements
In this application note you can find the info you're looking for in table 1, a screenshot is attached below.
In summary, here are the MCS tx power values:
MCS0 - 17.4 dBm
MCS1 / MCS2 - 17.3 dBm
MCS3/ MCS4 - 16.1 dBm
MCS5/ MCS6 - 14.5 dBm
MCS7 - 13.2 dBm
In general, I would recommend moving up to the newer generation of the CC32xx family, the CC323x devices.
