The answer is no. There is no AP mode for CC3000 neither ad-hoc (IBSS).
The CC3000 can connect to the iPhone if it's in hotspot mode or both connected to the same ap.
Another solution if you interesting in Apple connectivity is using web-server embedded into your product.
Using commercial web-server (such as the one Integrity-Project is currently developing for the CC3000) will allow you easy develop applications, web-services and web-server to your CC3000 module with Apple compatibility. For more information please use my public email.

Interesting, you are talking about Apple specifically. Can CC3000 be connected to an Android phone?
I read that Android Phone can be configured as Wi-Fi Server. Will this help?

Most Andoirds have a hotspot or a firmware upgrade that support hotspot/p2p. iOS 5.0 for iPhone 4+ has hotspot, but once you activate it, the Wifi session is lost. The hotspot in iPhone allows networking between the device and the iPhone.
The "Apple" thingy come in handy when you want to build a custom networking sessions. The main connection in iPhone is web browsing. That's why it's important to have web-server at your device.
