If you use Z-Stack, Zigbee is the protocol.

CC Debugger is used for downloading FW from PC to CC2530 and CC2531.

By the way, you would need LMP91000 which is a Configurable AFE Potentiostat for Low-Power Chemical Sensing Applications. You can refer to Figure 1. Sensor Design in www.ti.com/.../snoa922.pdf.
