As there have not been any updates recently, is the ZigBee Linux Gateway still an active and maintained product?

In any case, is the precompiled ZNP firmware for the gateway just the compiled source of the ZNP sample project in CCS and if not, where can I find the source in order to keep the Z-Stack up to date?

Yes, ZIGBEE-LINUX-SENSOR-TO-CLOUD is still active and Yes, the precompiled ZNP firmware for the gateway just the compiled source of the ZNP sample project in CCS.

It is as stated by YK, the ZIGBEE-LINUX-SENSOR-TO-CLOUD is still maintained as a tool and example solution but not updated as much as the SIMPLELINK-CC13X2-26X2-SDK which has quarterly updates. ZNP modifications are recorded in the README document of the Firmware folder so you can update from the pre-provided images if warranted.
