If you would like to use your load cell in the maximum range you will need PGA
For 5V condition please look at PGA308 or PGA309.
As well, alternative for MCU ADC could be ADC with integrated PGA like ADS1130 (18-bit ADC) or ADS1230(20-bit ADC)
