If LMP2012QML-SP's output voltage exceed 5.8Vdc. the abs. Max. voltage rating, the op amp may not function properly. We called it in EIPD (Electrically Induced Physical Damage), which the op amp could malfunction. The failure mode is overvoltage at the output.
Since this is the CMOS device, you would need implement overvoltage and overcurrent protection at the output, if such events can occur in the application.
Here is an example for overvoltage and overcurrent fault protection at the output of an amplifier.

I see that the supply is clamped by the zener D1 (as you mention for overvoltage protection). Your skim seems more related to protect aginst peak or fast transient. What is happening if the zener choosen is drifting slowly with temperature over 5.8V ? Is it the same answer ?

The 5.8Vdc is the absolute maximum rating; and it does not use +/- margin per the absolute max. ratings.
The typical operating voltage is tested at 2.7Vdc and 5.0Vdc in LMP2012QML-SP's datasheet. So the typical power supply rail should be 5.0Vdc from LDO. LDO typically has voltage range of 5.0Vdc ±(2 to 5)%. The %load-regulation is typically less than 5Vdc ±10% under load and over temperature in the worst case. So the LDO's voltage regulation is within 5.8Vdc absolute maximum rating for nominal operation.

LMP2012QML-SP's failure modes can occur if any of the following parameters are exceeded or if abnormal operating conditions are encountered.
The image below is shown a typical op amp's output overvoltage and overcurrent protection, if the op amp's output terminal has a chance to expose to abnormal operating events/conditions.
