The manual states that this produce has a fixed 2 V/V gain. It would be useful for our application to increase that value by maybe a factor of 2 or 4 without adding any extra components.
Can the resistors on this board be reconfigured/replaced to give a higher gain?

Hello Murray , you can set the output stage gain configurable by setting the resistance divider shown below . The fixed gain mentioned in the datasheet is only for the differential to single ended stage.
In the below example , you can see how the designer has set the total input to output gain = 5V/V
2 X ( 1 + (249/162))
However do please check for the Output voltage headroom to either supply .
