Is this representative of the maximum component junction temperature (temperature at the core of the component)? I was under the impression the 85°C temp is an ambient outside air temperature.

Yes you are correct about that, that was my mistake. What exactly is the application of this part to be worried about junction temperature?
As long as you are within ambient range junction temperature should not be a problem since this is not a high power dissipating part.
Based on other Audio ADCs the junction temperature would actually be closer to the storage temperature max but I cannot guarantee that nor do I easy way of getting the junction temperature for this specific part.
