Are there any detailed app notes or schematics on connecting an ADS1148 in single ended mode with 7 channels.

We are using seven, two wire, PT1000 sensors.

Luis' comments about using a higher resistance RTD to reduce the error of the wire resistance is important to consider. I'd also point out there's some documentation on RTD measurements with the ADS1148/ADS1248 that can be found at the following two links:
