There wasn't any information on the datasheet with regards to unused I/Os for the driver AND receiver.
Do I need to tie them to VCC or GND directly or through a resistor? Or do I need to leave them hanging?

You can leave these pins floating. Just note the output of the receiver will give a Logic High, while the driver gives a Logic Low for output Y and Logic High for output Z.

No; shorting outputs to the wrong voltage would greatly increase the power usage. Unused outputs should be left open. (In general, inputs should not be left floating, but this device has internal pull-up/-down resistors at all inputs.)
A differential output always has one of its pins in the high state. Such a DC voltage on an unconnected pin is not a problem.
