From our previous conversations, I believe you have access to the DS160PT801-DESIGN folder in My Secure Software. The EEPROM Configuration Guide is available in section 1.
Generally speaking, we recommend creating custom EEPROM files by opening one of the premade EEPROM images (available in section 2 of the My Secure folder) using the SigCon software, then making any changes that you need for your application. Otherwise it's pretty tricky to generate EEPROM files from scratch. Let us know if you need any help.

I tried to install the SigCon SW but I kept getting stopped by error messages around the installation of National Instruments Labview 2012 or compatible...
Is there Sigcon installation instructions?

I don't think we have written installation instructions but I can help. The SigCon software requires the NI Labview API in order to run properly. Are you using a base SigCon installer that contains the LabView RTE? You can download it from TI.com at this link if you haven't tried it already: https://www.ti.com/tool/download/SIGCONARCHITECT3-WRTE
Once you have a base SigCon installation up and running, by default it only has an example DS160PR410 profile. You can then download and execute the DS160PT801 profile updater ("DS160PT801.exe") from section 2 of the My Secure folder in order to add the DS160PT801 to your device list. From there you can open and edit EEPROM files, even when you're not connected to a board or device.
If you still have error messages, post the screenshots here and I'll look into them.

I would recommend starting with the DS160PT801_1x16.hex file. I'll check with my team to see if any modifications are needed to let it run successfully in a single-chip 1x8 application.

Were you able to confirm the hex file you recommended would work?
If I have an SMBus header on my circuit card, does TI have a recommended option for USB-SMBus adapter from PC USB to my circuit card when using SigCon Architect?

I've made a custom EEPROM file with a 1x8 link width by modifying one configuration in the premade 1x16 file, I'll send it to you in E2E Private Messages shortly.
At TI we typically use a discrete USB2ANY adapter as an interface between a computer/laptop USB port and a board SMBus. The SigCon Architect software is designed to interface with the USB2ANY. The product page is here: https://www.ti.com/tool/USB2ANY
