I wand to disable the Interrupt Output ( INT) signal by software configuration. Is it doable ?

No; the interrupt output is always active when any input has changed since the last read.

Can I set any input (P00-P27) to disable in case I don't want to use it and cannot set it as output ?

No. Your software must be prepared to handle interrupts from all pins.
