Can we ground any of input data bits out of 7 input data bits for a channel. will there be any advantage if we ground one bit in every channel or 2-channels.

For this deivce you can leave unused input pins floating, or you can use external pull-down resistors of ~ 10kOhms. (Also mentioned in this E2E: RE: WEBENCH® Tools/SN65LVDS95: REFERENCE DESIGN )
There is no particular advantage to not using input pins, and also please make sure that the channel connections and LVDS sequence from the datasheet is followed. You can find on the "Figure 1. 'LVDS95 Load and Shift Sequences" how the bits are serialized over the output.
