AM26C31: Different Date Code produce different outputs

That performance difference is expected. The datasheet only specifies the minimum and typical values. Both of these devices outperform that:

Now the reason there is a difference is because in 2024 this device changed fabs, which required a die revision. As such, the new process improved output performance. You can see the PCN change here:
