In reading all of the material for LVDS, I realize it is mainly designed for high speed serial communication. But can it still be used for low speed communication, i.e. transmitting status signals? Is LVDS still ideal in this case?

For example the LVDS buffers can operate from DC to high speed. As long as we make sure to bias the input and output properly you should be able to use LVDS from DC to high speed. Please note the link below and select the parameters you need. Then as long as the device is biased correctly you should be able to operate DC and up:
