SN65DP141: Pull up/down resister value for GPIO mode settings

In the EVM board, there are 1k ohm resisters with the jumpers to pull up/down those pins like EQ1, EQ0, Gain, etc. Can I just use 0 ohm to pull up/down these setting pins?

For I2C mode, will the register values be memorized permanently, or it needs to be written again through I2C, when the chip was powered up again?
