Can i use FPD-III in grey-scale(8 bit) mode? If yes, can i do so using the mentioned pair or should i select some other device?

may i know details on the "grey-scale 8bit mode"?
For the pair 925/926, it is one serdes to transmit the parallel data from 925 input side to the 926 output side. You can input any data here but pls note the input pin assignment in 925 parallel input should be mapped to the output pin assignment of 926.

I am working with optical Camera, the output is desired to be an 8 bit grey-scale image. So, basically I shall currently be using FPD-III for Display purposes. So, which of the output pins are required to be used (i.e. can I use any 8 bits from 24 bit bus or some specific pins for 8 bit display)?

Yes, you can use any 8bits from 925 as input, but meanwhile you should also use the corresponding 8bits pins in 926 side as output.
also, you can try 933/934 for your case as well.

Sure, it can. the unused pin in 925 can be pulled to GND.
