About SN74LS640-1N and SN74ALS640−1B's AC characteristic:
Could you tell me the time from DIR H→L ( L→H ) to A/B data direction reversal?

About SN74LS125AN's AC characteristic:
There‘s no AC characteristic's min value in datasheet.
Could you tell me the min value in the test conditions recorded in datasheet?

    When you change DIR, the outputs on one side are disabled, and the outputs on the other side are enabled. This is specified as tPxZ and tPZx.

    There is no guarantee for the minimum value (apparently, it has never been measured). You could assume zero.
    What do you need it for?
