Regarding the transfer delay time and ON resistance, there are only typ. values listed. Is it possible to know the max value for 1.8V⇔3.3V and 1.8V⇔5V?

The achievable speed is determined mostly be the parasitic capacitances of your board and the value of the pull-up resistors. So I guess these maximum values would not be very useful for designing the circuit.
