With the SN74AC04NSR, how many volts should I practically put in the power supply before it fails?
(In our internal experiments, even if the power supply of the IC was increased by 0.5V, it did not break down even if the current voltage was 10V.)

The absolute maximum ratings guarantee that the device will not be damaged with up to 7 V. But there is no guarantee that the device will break at any specific voltage. (Please note that voltages higher than 7 V are likely to degrade the device, even if the damage is not immediately visible.)
