You should be able to use the IBIS model for the SN74HCS595 instead: https://www.ti.com/product/SN74HCS595#design-tools-simulation

BYW, what's the difference 'S' (HC vs HCS) means for this chip?

The "S" means that the device has schmitt-trigger inputs, whereas our HC devices do not have schmitt-triggers. However, this is pretty inconsequential for IBIS model purposes.
