In the LSF0102 datasheet, I see references to a voltage Vm. What does Vm represent? Is it the middle point of the high and low voltages?

That is correct, Vm = 0.5*Vref_A or Vm= 0.5 Vref_B (depending on the context it is used), see Figure 6-1 in section 6.
