You can use a linear interpolation calculator using values from the datasheet to create a similar plot: IOL Linear Interpolation | Desmos

For the IBIS model, it depends on the program. Usually there is an "ibis file" model you can select in Spice or ADS and then just select the ibis file wherever it is saved.
