Electrically what should the EPAD be connected to? (I assume ground, but this information NEEDS to be in the datasheet before it can be designed in).

Hi ErnestHanks ,

You need to solder the exposed thermal pad to Ground as heat sink for thermal performance. you can find it at the end of the datasheet in the mechanical drawings .
