The SN74AUP2G07 would work. Its outputs are limited to VCC + 0.5 V only when the they are active; in the high-impedance stance, you are allowed to pull them up to a higher voltage.
If you want to shift 1.25 V input signals to 3.3 V, then you should use a level shifter like the SN74AXC4T245. Is it necessary for the outputs to be open-drain?
