For the device, my question is showing as below.

1. If there is unused ch, what is the suggested connection? GND/Vcc/floating?

2. Do I need to set default value on input side?

Connect inputs to either V_CC or GND. Outputs can be left open. See [FAQ] How do I terminate any unused channels of a logic device?

If you want a default value that you can override, use a pull-up or pull-down resistor.
