We do not have an out of box SDK example for I2C Slave interrupt.
However, you can refer GPIO interrupt examples (SDK_INSTALL_PATH/examples/drivers/gpio/gpio_input_interrupt) and I2C examples (SDK_INSTALL_PATH/examples/drivers/I2C) and develop further.
