In TI documentation am2431.pdf (and in other such documentation), there is a mention of "Industrial Ethernet Peripheral" without any further details. Where can I get some more information on this?

These are part of the Programmable Real-Time Unit and Industrial Communication Subsystem - Gigabit (PRU_ICSSG) which is included in the device. The Technical Reference Manual has an entire chapter dedicated to the PRU_ICSSG.

Looking through the document for your awareness to better understand what is presented, the protocols outlined in Chapter 2 of the document all use the Industrial Ethernet Peripheral that is part of the PRU_ICSS/PRU_ICSSG.
