I am investigating storing encrypted data in OSPI.

Is it possible to leverage OTFA (on the fly encryption and authentication) used for XiP to accomplish this?

Yes , AM263P does support this feature.

I have a follow-up question.

I'm not sure my original question was specific enough...

Does the OSPI Indirect Access Controller (INDAC) support 'on the fly' encrypted read/write?

see: AM263P Technical Reference (Manual SPRUJ55), section "13.3.2.4.10 OSPI Indirect Access Controller (INDAC)"

I want to use this for non-executable (image) data.

Yes, OSPI Indirect Access Controller (INDAC) mode does support 'on the fly' encrypted read/write.
