Some of the failure modes that I am use to with the a ADC thermistor are open, short and overall degradation when the sensor is exposed to extreme temperatures. We do not have any other thermistors on our board to compare the chip temperature too so we are curious if TI has any protections or recommended ways to make sure it is functional.

As long as the temperatures do not exceed the datasheet maximum values, the temperature sensor of the MSPM0 should be able to capture it without issue, and we will be able to uphold our device lifetime guarantee. We don't recommend directly exposing the M0 to values outside its maximum range, as this could result in shortening the device's lifetime. As for protection, we recommend adhering to the general hardware guidelines outlined in this document.

That makes sense to me, I am wondering if the internal temperature could provide a false reading? Lets say the chip is 80C is it possible for the temperature sensor to ready 0C or 30C

The only way for it to be that way is if the calibration of the temperature sensor is incorrect. You can use the TRM Temperature sensor section to explore how the process of converting the ADC readings into temperature works (even when it is a different family, the principle remains the same; the MSPM0C TRM will eventually include this section).
