We are in need of a CPU that have 105°C (or even better 125°C) operating temperature.
I think I saw that Stellaris roadmap had some CPU (think it was a M4).
We need to have at least 96k RAM.

I don't know if you are only looking at Stellaris family, but the TMS320F28335 is definitely capable of high temperature, I know that some use it (in special packaging) at temperatures much higher than 125 C. It only has 68 K ram, though. The F28346 is specified up to 125 C, and has plenty of RAM.

But I can't find the datasheet for TMS320F28346, I dont even find the product on TI web.
Can anyone give me a link or a document ?
Do you know if there are any ARM device that can handle the temperature?

My bad, it is TMS320C28346.
It looks like some of the Hercules ARM Safety MCUs might be high temperature.

All the C2000 microcontrollers have versions good for 125 degC. The TMS320F28069 and other F2806x derivatives have up to 100 KB RAM (be careful not to get confused if you look in the datasheet. C2000 datasheets list memory in 16-bit words. You need to double what's shown in the datasheet to get bytes).

Dustin is also correct that all the TMS470/570 ARM based microcontrollers have at least 105 degC rating, many are 125 degC.
