I was wondering if there was a way to physically remove the LCD on the dk-tm4c129x development board. Our application does not require the LCD, and we wish to test the dev board in fairly humid conditions.

As I understand it, the LCD is taped down. So, yes, with some care you can remove the LCD. I would recommend trying to cut at the tape with a thin bladed instrument as prying it off might damage the LCD.
Several things jumped out from such post:
a) Your "skilled removal" of the Lcd may itself impact the, "humidity handling" performance of that Dev. board. (i.e. as vendor has advised - special care is required to avoid damage to the Lcd - and may also damage/disturb the "normal" finish of the Dev. board's pcb tracks/vias etc. - in that area.
b) Is it your plan to, "Resell the unaltered Dev. board?" If not - what is the value of such a test?
c) There are long established, "normal/customary" means/methods to produce such circuit boards destined for such demanding environments. It's unlikely that the Dev. board - listed here - encompasses such, "protections" as they inevitably add cost/complexity.
This vendor provides MCUs and a vast number & variety of other chips/devices. Meeting "uncertain/unspecified" humidity/environmental specs - not constrained to their unique devices - is your responsibility - not theirs...
