I want to learn TMS570ls3137 MCU

I dont have usb stick or HDK but I have the micro controller in 144-pin package

for getting started with this MCU which PDFs should I read

The best to start is to read the Technical Reference Manual.

but technical refrence manual is to long

which parts of it are usefull if, I want to program the chip and use GPIOs ?

HalCoGen is the place to start if you don't want to read the manual first.
Eventually you will need to read the manual though.
