TI provides many technical documents online. Here is more general information about Hercules MCUs : www.ti.com/.../overview.html .
From the product page ( www.ti.com/.../RM57L843 ), you could download Datasheet and Technical Reference Manual which gives you comprehensive information for all modules implemented on this device. Apart of those documents many training videos could be found on TIs site ( training.ti.com/hercules ) .
TI, also provides configuration and code generation tool ( HALCoGen - www.ti.com/.../HALCOGEN ) which makes developing of a project easier. After installing HALCoGen you will find some examples that comes with it.
