I would like to know the how to select the 5V ADC reference on the LAUNCHXL2-570LC43 as there is no much documentation available on the product page.

Also Kindly share the schematic if possible for better understanding of board. Thanks for the support in advance

Hello,
You can download schematic from here: processors.wiki.ti.com/.../LAUNCHXL2-570LC43
To use +5V as ADREFHI and VCCAD you could populate R4 and remove R3 (page 2 of schematic)
