TM4C1294NCPDT: Interfacing NAND flash with TM4C129NCPDT for data logging

In general, you just need to get the SPI interface working and then follow the communication protocol for your NAND flash to read/write data. We have TivaWare examples for general SPI usage in the examples/peripheral/ssi folder. It doesn't sound like you even need a file system, so it should be quite straightforward.

The closest reference design would be one that uses SDRAM with the EPI module: www.ti.com/.../TIDM-TM4C129SDRAMNVM but I don't think it will be very applicable. Nonetheless, you can have a look and see if it helps at all.
