Just wanted to let you know that it was a pretty silly mistake.
Our code did not unlock the PB7_GPIO15 signal. So the fix was to add:
GPIOPinUnlock( GPIO_PORTB_BASE, GPIO_PIN_7 );

No thanks, it was just to let everyone interested know about the "solution". Don't forget about pin unlock when using ethernet in this mode!
