Has something like this been done? I've tried Google but came up dry.

It should be possible. I am currently working with Purepath Wireless solutions of TI which is excellent for wireless audio streaming. But for your application ( you mentioned you wanted to use only XBee?? ) I think it will work, you need an appropriate codec to which you will connect your mic input. This codec you can connect to your XBee Transmitter and send the data which is received at the XBee receiver interfaced with your PC.
