is it possible to set the SPI CLK and MOSI pins manually high and low?

You can switch to port functionality for both pins and use them as GPIO.

How can I do that? I tried to set the bits of the P1DIR and P1OUT registers, but it didn't work.

You need to change your pin functionality from SPI to GPIO.

This can be done with the P1SEL bits, see datasheet / user guide.
