Simple DAQ with MSP430 LaunchPad?

So, I've only begun exploring the features of the MSP430 LaunchPad, and one of the first things I see is that TI provides a a cool little PC app to display ADC temperature data from the LaunchPad in real-time (not sure about the update rate, though) .  And so, I say to myself, hey, wouldn't it be nice if this very low cost jewel (i.e., the whole LaunchPad) could be used for simple DAQ?  And if it could be made to talk with LabVIEW and send data to a LabVIEW PC for analysis, that would be very awesome, especially for cost conscious applications like education.  Anyone out there know if this has been done yet?  There are pages and pages of great LaunchPad projects, but I haven't seen this done anywhere yet.  Oh, if you don't know about the temp DAQ demo, here's the info & links from the LaunchPad Workshop pdf:
