is the EEPROM absolutely necessary or can it be left out?
I thought that if you can load the firmware via USB-C or via I2C (MCU), you could omit the EEPROM?
Please give me a clear statement.

Yes, you can delete the EEPROM, but need to use the MCU/HUB to load the firmware via I2C2, and also need to set the TVSP to Index1, 3, 5, 7.
Your schematic diagram should be like:
For the USB-C update, it only can work when the EEPROM is exist, and need to set the TVSP to Index 8, then you can update the EEPROM firmware via the USB-C. Thank you.

Yes, you need an EEPROM or a MCU or a HUB is ok, the device have the internal memory, but only save the original function, need to update firmware to achieve the full function. And sorry, I am not familiar with the MCU, but as long as it can have the IIC communication is ok.
