The different orderables are different NVM configurations - different pre-programmed configurations of the part (different default register values). To find the details of what settings are in each one, you can check the device user's guides for each OPN: https://e2e.ti.com/support/power-management-group/power-management/f/power-management-forum/1172800/faq-tps6594-q1-user-guide-locations
For selection: usually these OPNs are targeting different processors or systems that they are designed to pair with. Can you comment on what you are looking to power? The solution laid out in that user's guide is a 2 PMIC system using TPS6594141B and LP876441B1.
