Otherwise, what would happen shorting this pin to ground?

Hi Mark,
In this case, you would want to leave the CT pin floating. This pin directly affects the gate voltage of the FET, so grounding it may prevent the pass FET from being able to turn on.

This does make me wonder. Would leaving the pin open, act like infinite capacitance? Creating an infinite rise time?

Good question. Actually this would be a very small capacitance because the gate capacitance of the FET would be the only capacitance on that node.
